Ingredients and Helpful Tips
Once you learn how easy it is to slow-roast pork in a slow cooker using everyday pantry ingredients, you’ll see just how affordable and stress-free homemade meals can be. These are the only ingredients you’ll need for this flavorful pork dinner.
For the Sauce:
- Avocado Oil – Olive oil or any neutral cooking oil works just as well.
- Honey – Brown sugar can be substituted if needed.
- Soy Sauce
- Stone Ground Mustard
- All Purpose Seasoning – I used my homemade blend, which is lower in salt than most store-bought versions. If using a commercial seasoning, add it gradually and taste as you go to avoid over-salting.
- Homemade Beef Bouillon – My version is lower in sodium and completely plant-based, made from herbs and vegetable powders. If you don’t have it, you can:
- omit it and increase the all-purpose seasoning, or
- substitute your favorite beef bouillon, adding a little at a time and tasting as you go.
- Apple Cider Vinegar
- Red Onion, minced
- Minced Garlic
- Herbs – Thyme, Rosemary and Bay Leaves: These are great for flavoring pork and are always in my pantry. But, use the herbs and seasonings your family loves best.


For the Roast
- Pork Loin Roast (not pork tenderloin)
- Vegetables – I had leftover mashed potatoes in the fridge, so didn’t add potatoes to the pot this time. I used frozen green beans and fresh carrots. Any of your family favorites will work. I recommend baby potatoes or cut -up potato chunks (Cutting your own potatoes is way cheaper.), carrots, parsnips, sweet potatoes, cauliflower, etc.)

Good Food Doesn’t Have to Cost a Fortune
A slow cooker pork loin roast is one of the best values you’ll find when feeding a family on a tight grocery budget. Pork loin is often far less expensive than beef — and lately, even cheaper than chicken.
I recently bought two pork loins at Walmart for just $1.94 per pound, bringing each 4 to 5-pound roast in at under $10. That’s hard to beat when a beef chuck roast can easily run $30 or $40.
Because pork loin is boneless, you’re not paying for extra weight. It has a fat cap that adds flavor as it cooks, but very little internal fat, so there’s minimal waste when the roast is done.
Add the vegetables your family loves best to the crock pot. We love potatoes, carrots and green beans. Sweet potatoes, cauliflower and parsnips are also excellent choices.
For around $15, you can create a full dinner for six with protein and one or two veggie sides. Plus, this recipe makes enough leftover pork roast to transform into a completely different meal later in the week — and it won’t taste like leftovers at all.

I’m a firm believer that every recipe is really a starting point — a base formula you can adjust to fit your family’s tastes, pantry, and budget.
You can follow this recipe exactly as written, or swap in the herbs, seasonings, and vegetables you already have on hand. Either way, you’ll end up with a delicious slow cooker pork roast that works for your kitchen and your family.
Start with the sauce. What do you have that will add savory/salty flavor, a balance of sweetness, acidity to cut through richness and help tenderize the pork, and herbaceous notes to round everything out? Stir it together and taste. Adjust as you go to create a flavor profile you love.
No pork loin in the fridge? Try subbing chicken thighs or chicken breasts. The same principle works for beef or lamb, as well.
I used up some leftover mashed potatoes for our dinner and just added carrots and frozen green beans to the slow cooker pork roast. But it also works well with baby potatoes, cut-up whole potatoes, cut-up sweet potatoes, parsnips or cauliflower.

Leftover Makeovers Save Time and Money
When you repurpose slow-cooker pork roast leftovers to make a completely new meal, the protein doesn’t need to be cooked or purchased again, saving you time and money.
This delicious pork can be used to create dishes with flavor profiles unlike the meat-and-potatoes roast dinner they started as. Here are some of my favorite ways to repurpose it.
- BBQ Pulled Pork Sandwiches – Stir your favorite BBQ sauce into leftover pork roast and heat. Simple and cheap. Pile the pork onto buns and serve with quick and easy homemade coleslaw! You’ll be the rockstar getting rave reviews from leftovers.
- Cheats Pork Souvlaki Wraps – Toss leftover pork in a skillet with olive oil, minced garlic, lemon juice and oregano.
- Cover the bottom of the skillet with about two tablespoons of olive oil.
- Amounts of ingredients will depend on how many wraps you’re making. Shoot for 1/3 to 1/2 cup of meat per wrap.
- I use 1 Tablespoon lemon juice, 1/2 teaspoon oregano and 1/2 teaspoon of minced garlic per cup of leftover meat.
- Stir continuously as you heat the meat through. Then add the pork to warm Greek pita wraps.
- Now you can take the time to make tzatziki if you like, but I’m going to ask you to trust me on this one. For a quick alternative, add a layer of cottage cheese.
- Then top with fresh red onion slivers, cucumber slices and chopped tomatoes. I even toss on a sprig or two of fresh parsley if I have it. A little squeeze of fresh lemon juice is the perfect finish. Also optional but delicious is a crumble or two of feta cheese. Swoon! You’re gonna love these. Flavors inspired by souvlaki, but made quick and easy with leftovers.



- Egg Roll in a Bowl – Use leftover pork roast instead of ground pork to create these quick and easy egg roll bowls.
- Egg Rolls – Homemade egg rolls are easier than you think. Use the leftover pork with the veggies and fry, bake or air fry. You’ve got this!
- Buffalo Ranch Chicken Melts – Are you fans of Buffalo anything? Everyone at my house sure is. Substitute leftover pork for the chicken in my recipe for Buffalo Ranch Chicken Melts, and there’ll be a stampede to the table. So good!

How to Make Slow Cooker Pork Roast
This easy, affordable recipe comes together in under 10 minutes, and then the slow cooker does all the work.
- Whisk all the sauce ingredients together in the bottom of the slow cooker crock.
- Add bay leaves to the pot.
- Use a fork to poke deep holes into the pork loin. Be sure to do this on all sides.
- Add the pork loin to the crock pot and turn it several times to coat it with the sauce.
- Place any cut vegetables you desire on top of the roast. I used carrots and a bag of frozen green beans, but potatoes, sweet potatoes, cauliflower, and parsnips are other great options.
- Pour one cup of water around the edges of the crock pot and then cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 8 to 10 hours, until the pork can be easily pulled apart. The internal temperature will be much higher than the 145° I recommend when cooking pork loin to be sliced. You want to give this time to be fall-apart tender.
- At the end of the cooking time, remove the veggies and roast and serve your delicious comfort food dinner.
- The drippings can be used to make gravy, using the formula from this recipe, if you like.
