Bisquick Taco Pie is a weeknight dinner dream — budget-friendly, taco-night deliciousness with quick, no-fuss preparation.
I’ve never met a kid or an adult who didn’t enjoy this Impossible Taco Pie. I think it will become a fast favorite in your recipe collection.
I started making this right after we were married forty-one years ago, but the recipe may have been around even longer. I’m not sure.
This easy vintage recipe for Bisquick Taco Pie has continued to appear on our family table for decades. I loved making it because David and the kids gobbled it up whenever it was served.
We even shared it with guests when we were first married and too happy to know we were poor. lol It was a meal we could afford and that our friends enjoyed.
My standard menu for our “special” dinners was this Impossible Taco Pie, Strawberry Cottage Cheese Salad and green beans. And I always made brownies for dessert. lol We thought we were living large.
The fact is, grocery dollars are as scarce now as they were then. It may seem silly to dig out old vintage recipes, but those recipes were developed to stretch our grocery budgets—and they tasted great!

The Ingredients
That’s right! Only seven everyday pantry ingredients are required to make Impossible Taco Pie. It makes six servings, and with some yummy sides, it will be a filling and satisfying Taco Tuesday meal.
As you can see, I chose Walmart’s store brand, Great Value, to save money on the ingredients. They worked perfectly.
My cost breakdown is based on the amounts of each ingredient for the recipe, not the total cost at the grocery store to buy ingredients that will have multiple uses. The prices in my area may be different from where you live, but they should give you a general idea of whether the recipe will be affordable for you to make.

Yes. The pie is so quick and easy to prep, I typically prefer to make it fresh. But, you can assemble the pie, cover it with plastic wrap and then store it in the fridge for up to 24 hours. Remove it from the refrigerator about 30 minutes before baking so it has time to come to room temperature. Otherwise, starting with the pie cold may require additional baking time.
Leftovers keep well in an airtight container in the refrigerator for two or three days. Impossible Taco Pie also freezes tremendously well. Be sure it’s completely cool before freezing. Then wrap it and/or seal it in an airtight container. Thaw overnight in the fridge and then warm individual slices in the microwave.
In this case, the word impossible refers to a group of recipes that form their own crust as they bake. Since no crust has to be made separately, but the dish still has one, these recipes became known as “impossible.”
What to Serve with Impossible Taco Pie
There are lots of easy and delicious, budget-friendly options to serve with taco pie. Pull out your favorite taco toppings and let everyone fix their slice the way they love best.
Fresh garden tomatoes are perfect right now along with a dollop of sour cream or plain yogurt and a little bit of shredded lettuce. Salsa, black olives, diced green onions or avocado are all delicious toppings, as well.

Possible Recipe Variations
Make it Gluten Free: It is definitely possible to purchase gluten-free baking mix, now. [affiliate links] Bisquick, King Arthur Flour and Bob’s Red Mill all make ones I would trust. If making gluten free taco pie be sure the taco seasoning you choose is gluten free. Many contain wheat. Try my homemade taco seasoning for 100% gluten-free.
Add Vegetables: You could add minced onion, bell pepper, jalapeno or even frozen corn. I wouldn’t add more than about 1 cup without adding extra batter. Saute the veggies with the ground beef as you’re browning it so they release all their moisture in the meat, instead of into your pie. I don’t recommend adding raw veggies to the Bisquick taco pie.
No Baking Mix, No Worries: Whisk together 3/4 cup of unbleached all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt. Then, use a fork or pastry blender to cut in 3 Tablespoons of cold butter until the mixture becomes fine crumbs. This will make about 1 cup of baking mix. Use 1/2 cup in the recipe and store the rest in an airtight container or ziptop bag to use in the future.
How to Make Bisquick Taco Pie
- Preheat the oven and grease a pie plate.
- Brown and drain ground beef, then mix it with taco seasoning and green chilies. Spread the mixture evenly in the prepared pie plate.
- Sprinkle the grated Cheddar over the meat mixture.
- Beat together the baking mix, milk and eggs. Pour the batter over the meat and cheese in the pie plate.
Bake the Taco Pie in a 400° oven for 25 to 30 minutes. A toothpick or knife inserted into the center will come out clean. The pie will be golden brown on top.
Allow the pie to cool for five to ten minutes before slicing. I generally cut it into 6 wedges, but if you’re serving littles you might want to cut eight. Serve with your favorite toppings and taco night sides.

Ingredients
- 1 lb. ground beef, browned and drained (454 g)
- 1 (1 oz) pkg. taco seasoning mix (28 g)
- 1 (4 oz) can green chilies (113 g)
- 1 cup Cheddar Cheese, grated (114 g)
- 1 cup whole milk
- 3 eggs
- 1/2 cup baking mix
Instructions
- Preheat the oven to 400° and grease a 9″ deep dish pie plate or a 9″ round cake pan. (I have also baked this in a 9″ square pan and simply cut it into rectangles instead of wedges.)
- Brown the ground beef and drain off any excess grease.
- Stir in the taco seasoning and chili peppers. Taste the meat mixture for seasoning and add salt and pepper if needed.
- Spread the meat mixture into the prepared pie plate.
- Sprinkle the freshly grated cheese over the meat.
- Whisk together the baking mix, milk and eggs to create a smooth batter. I always seem to have a few lumps in mine, but you do want to be certain that it’s all fairly well incorporated.
- Pour the batter over the cheese and meat, filling the pie plate evenly.
- Bake at 400° for 25 to 30 minutes until a knife or toothpick inserted into the center comes out clean and the top is golden brown.
- Allow the taco pie to cool in the pie plate for 5 to 10 minutes. Then slice and serve with your favorite taco toppings.
