Wondering if I can substitute agave syrup for the white sugar or just cut the white sugar in half. What do you think?
Hi Sue! I’ve never tried that so I just can’t say for sure. Typically to sub agave syrup for sugar you would use 1/4 to 1/3 cup for every cup of sugar. And then you would need to reduce the liquid in the recipe by 1/4 to 1/3 cup. The only real liquid in the recipe is the eggs. My concern is that the cookies would be crumbly if you removed the eggs which are the binding agent to hold everything together. If you do try it, I would be curious to know if the experiment is successful.
I would probably try cutting the sugar in half, before subbing the agave.
