Chewy, soft pita flatbread with crispy edges is spread with roasted red pepper hummus and topped with boldly flavorful homemade gyro meat.
Halved cherry tomatoes add sweetness and moisture. Slivered red onions give the pita pizza some savory umami. And, feta cheese is the perfect tangy funk to bring it all together.
After it’s baked, the gyro pizza is drizzled with tzatziki and sprinkled with parsley. Swoon! It’s so-o-o good!
Why a Greek Pizza Recipe?
Why not Greek pizza? lol Fantastic flavor, quick and easy prep and a genius repurposing of my favorite homemade gyro meat leftovers.
Groceries cost a bigger and bigger percentage of our monthly budgets. I’m sure you’re feeling that pinch, too. And in our case, for the first time in several decades, I’m cooking for just the two of us, most of the time.
No matter how many you’re cooking for, it’s never been more important to stretch the food we have and reduce waste. The problem is that the same leftovers day after day can get really boring.
Creating ways to use the same ingredients in new and delicious ways saves money, reduces waste and inspires excitement around the dinner table.
Everything you love about a homemade gyro, blended with a unique “sauce” for pizza and prepared in a short amount of time, makes this recipe one of my favorite ways to use leftovers! It’s going to be yours, too!

Gyro meat is a simple combination of ground meat, (I use ground beef and ground lamb, but it can be made with all ground beef, too.), onion and garlic along with some herbs and seasonings. The boldly delicious Mediterranean/ Middle Eastern blend of spices I use makes the recipe unique and crave-worthy.
You can also buy pre-made gyro meat in some supermarkets. It usually comes in a frozen kit along with everything to make gyro sandwiches. It’s not something readily available in my area. Plus, the few I’ve tasted can’t come close to my homemade gyro meat recipe . I strongly encourage you to give that recipe a try!
The Leftover Makeover
Our favorite homemade gyro meat sandwiches, If you love gyros you have to try this recipe ! My mission was how to turn leftovers from this tasty meal into something brand new.
We love gyros! It just doesn’t get better than a flavor-packed meal you can hold in your hand. They’re nourishing and satisfying and one of the favorite things in our regular meal rotation.
My gyro meat recipe provides us with plenty of leftovers, though, now that I’m usually cooking for only two. It freezes well, so I always keep some on hand in the freezer. But, I really wanted some new and creative ways to use the leftovers.
The conundrum was how to take the leftovers from one of our favorite sandwiches and make them something delicious and new enough to be exciting. Gyro pizza was born!
The Ingredients
Pita Flatbread – No making pizza dough! Such a time saver!
Roasted Red Pepper Hummus
Homemade Gyro Meat slices , broken or crumbled
Cherry Tomatoes (grape tomatoes, any tiny salad tomato)
Feta Cheese crumbles
Red Onion , slivered
Tzatziki Sauce
optional, minced parsley for garnish
FAQ about Gyro Pizzas
Do I have to use feta cheese? Absolutely not. Feta doesn’t melt, but it does add extraordinary flavor. That being said, you could grate some Mozzarella and use it instead of feta, if you prefer. Traditional Greek pizzas use a mixture of Mozzarella and white Cheddar. That could be delicious, too.
I don’t have hummus. Can I use something else for the sauce? Baba Ganoush (roasted egg plant dip) would be a great alternative to the hummus. You could also just brush the pita bread with a quality olive oil and give it a light sprinkle of Greek seasoning and kosher salt. Then add the other toppings and bake.
What are additional Greek inspired toppings that could go on a Greek pizza? Try artichokes, roasted red peppers or olives.
I pulsed about 1/4 cup of this tzatziki in a smoothie blender, to get a thin drizzle.
You can definitely buy tzatziki ready-made. However, it is EASY to make your own and you can use the recipe right from this blog .
For my gyro pizza recipe, I simply took some of my homemade tzatziki sauce and pulsed it a couple times in my blender. Because of the moisture content of the cucumbers, it became a very thin drizzle with little specks of cucumber and fresh dill.
You can definitely use dollops of traditional tzatziki sauce on the top of your pizza. I just preferred something that was easier for me to distribute evenly. My tzatziki drizzle was 100% perfect.
How to Make Gyro Pizza
Assemble each gyro pizza with these easy steps (See the full How to Make Gyro Pizzas video in the recipe card, below .):
Preheat the air fryer or a standard oven to 425°.
Spread roasted red pepper hummus on the pita flatbread, stopping about 3/4″ to 1″ before the edge, leaving a nice rim for the “crust”.
Top the hummus with slices of homemade gyro meat and halved cherry (salad or grape work, too) tomatoes.
Add a few slivers of red onion and then sprinkle the mini pizza with feta cheese.
Place the pizza in the air fryer basket/rack and cook for 4 minutes in the preheated air fryer. (For standard oven, place the pizza directly onto the preheated oven rack and bake for 5 – 7 minutes until your desired crispness is reached.)
Drizzle with tzatziki and sprinkle with minced parsley.
Slice and serve.
Unbaked mini pizza ready for the air fryer.
Baking or Air Frying Your Pita Pizza
This mini pizza recipe is made in just a few simple steps. When it gets to the cooking part, you could definitely bake the pita pizza in your oven, but for me, this is an air fryer recipe.
What happens to the pita flatbread crust in my air fryer is absolutely amazing! It’s soft and tender in the middle, but the edges get toasted and crisp and wonderful.
I used my Breville Joule Oven [affiliate link] , which has a fantastic air fryer option. Yesterday, I was cranking these pita bread pizzas out, two at a time. I got lucky enough to get to visit with a few of our kids and grandkids. Everybody needed after school snacks or some evening munchies. My new air fryer oven [affiliate link] made it a quick and simple process to offer these scrumptious gyro pizzas.

Temperature and Timing in a Standard Oven
When I tested this gyro pita pizza recipe, in the oven, I placed the prepared pizza directly on the preheated oven rack. You can use a baking sheet if you prefer but the finished pizza may not have as crisp a crust as you’re expecting.
Preheat your standard oven to 425° and bake for 5 – 7 minutes, until the desired level of crispness and browning is achieved.
Temperature and Timing in an Air Fryer
My Breville Joule Oven was also set to 425° after I selected the air fry feature. I like making gyro pizza in the air fryer because I can get that crispy crust result without heating up the big oven. Which means I don’t heat up the whole house. Plus, it preheats much more quickly than my standard oven. I can still make these mini pizzas two at a time in my Breville Joule .
Preheat the air fryer to 425° and air fry the gyro pizza for 4 minutes.

1 pita flatbread
2 – 3 Tablespoons roasted red pepper hummus
3 – 4 gyro meat slices , broken or crumbled (from my gyro meat recipe )
