Chewy, soft pita flat­bread with crispy edges is spread with roast­ed red pep­per hum­mus and topped with bold­ly fla­vor­ful home­made gyro meat. 

Halved cher­ry toma­toes add sweet­ness and mois­ture. Sliv­ered red onions give the pita piz­za some savory uma­mi. And, feta cheese is the per­fect tangy funk to bring it all together. 

After it’s baked, the gyro piz­za is driz­zled with tzatzi­ki and sprin­kled with pars­ley. Swoon! It’s so-o‑o good!

Why a Greek Pizza Recipe?

Why not Greek piz­za? lol Fan­tas­tic fla­vor, quick and easy prep and a genius repur­pos­ing of my favorite home­made gyro meat leftovers.

Gro­ceries cost a big­ger and big­ger per­cent­age of our month­ly bud­gets. I’m sure you’re feel­ing that pinch, too. And in our case, for the first time in sev­er­al decades, I’m cook­ing for just the two of us, most of the time.

No mat­ter how many you’re cook­ing for, it’s nev­er been more impor­tant to stretch the food we have and reduce waste. The prob­lem is that the same left­overs day after day can get real­ly boring. 

Cre­at­ing ways to use the same ingre­di­ents in new and deli­cious ways saves mon­ey, reduces waste and inspires excite­ment around the din­ner table.

Every­thing you love about a home­made gyro, blend­ed with a unique “sauce” for piz­za and pre­pared in a short amount of time, makes this recipe one of my favorite ways to use left­overs! It’s going to be yours, too!

Where Do I Get Gyro Meat?

If you’ve missed my post on how to make Home­made Gyro Meat, you real­ly have to give it a try. If you can bake a meat­loaf, you can def­i­nite­ly make my easy gyro meat recipe.

Gyro meat is a sim­ple com­bi­na­tion of ground meat, (I use ground beef and ground lamb, but it can be made with all ground beef, too.), onion and gar­lic along with some herbs and sea­son­ings. The bold­ly deli­cious Mediterranean/ Mid­dle East­ern blend of spices I use makes the recipe unique and crave-worthy.

You can also buy pre-made gyro meat in some super­mar­kets. It usu­al­ly comes in a frozen kit along with every­thing to make gyro sand­wich­es. It’s not some­thing read­i­ly avail­able in my area. Plus, the few I’ve tast­ed can’t come close to my home­made gyro meat recipe. I strong­ly encour­age you to give that recipe a try!

The Leftover Makeover

Our favorite home­made gyro meat sand­wich­es, If you love gyros you have to try this recipe! My mis­sion was how to turn left­overs from this tasty meal into some­thing brand new.

We love gyros! It just does­n’t get bet­ter than a fla­vor-packed meal you can hold in your hand. They’re nour­ish­ing and sat­is­fy­ing and one of the favorite things in our reg­u­lar meal rotation.

My gyro meat recipe pro­vides us with plen­ty of left­overs, though, now that I’m usu­al­ly cook­ing for only two. It freezes well, so I always keep some on hand in the freez­er. But, I real­ly want­ed some new and cre­ative ways to use the leftovers. 

The conun­drum was how to take the left­overs from one of our favorite sand­wich­es and make them some­thing deli­cious and new enough to be excit­ing. Gyro piz­za was born!

The Ingredients

  • Pita Flat­bread — No mak­ing piz­za dough! Such a time saver!
  • Roast­ed Red Pep­per Hummus
  • Home­made Gyro Meat slices, bro­ken or crumbled
  • Cher­ry Toma­toes (grape toma­toes, any tiny sal­ad tomato)
  • Feta Cheese crumbles
  • Red Onion, sliv­ered
  • Tzatzi­ki Sauce
  • option­al, minced pars­ley for garnish

FAQ about Gyro Pizzas

Do I have to use feta cheese?

Absolute­ly not. Feta does­n’t melt, but it does add extra­or­di­nary fla­vor. That being said, you could grate some Moz­zarel­la and use it instead of feta, if you pre­fer. Tra­di­tion­al Greek piz­zas use a mix­ture of Moz­zarel­la and white Ched­dar. That could be deli­cious, too.

I don’t have hum­mus. Can I use some­thing else for the sauce?

Baba Ganoush (roast­ed egg plant dip) would be a great alter­na­tive to the hum­mus.
You could also just brush the pita bread with a qual­i­ty olive oil and give it a light sprin­kle of Greek sea­son­ing and kosher salt. Then add the oth­er top­pings and bake.

What are addi­tion­al Greek inspired top­pings that could go on a Greek piz­za?

Try arti­chokes, roast­ed red pep­pers or olives.

I pulsed about 1/4 cup of this tzatzi­ki in a smooth­ie blender, to get a thin drizzle.

Tzatziki Sauce

You can def­i­nite­ly buy tzatzi­ki ready-made. How­ev­er, it is EASY to make your own and you can use the recipe right from this blog.

For my gyro piz­za recipe, I sim­ply took some of my home­made tzatzi­ki sauce and pulsed it a cou­ple times in my blender. Because of the mois­ture con­tent of the cucum­bers, it became a very thin driz­zle with lit­tle specks of cucum­ber and fresh dill. 

You can def­i­nite­ly use dol­lops of tra­di­tion­al tzatzi­ki sauce on the top of your piz­za. I just pre­ferred some­thing that was eas­i­er for me to dis­trib­ute even­ly. My tzatzi­ki driz­zle was 100% perfect.

How to Make Gyro Pizza

Assem­ble each gyro piz­za with these easy steps (See the full How to Make Gyro Piz­zas video in the recipe card, below.):

  1. Pre­heat the air fry­er or a stan­dard oven to 425°.
  2. Spread roast­ed red pep­per hum­mus on the pita flat­bread, stop­ping about 3/4″ to 1″ before the edge, leav­ing a nice rim for the “crust”.
  3. Top the hum­mus with slices of home­made gyro meat and halved cher­ry (sal­ad or grape work, too) tomatoes.
  4. Add a few sliv­ers of red onion and then sprin­kle the mini piz­za with feta cheese.
  5. Place the piz­za in the air fry­er basket/rack and cook for 4 min­utes in the pre­heat­ed air fry­er. (For stan­dard oven, place the piz­za direct­ly onto the pre­heat­ed oven rack and bake for 5 — 7 min­utes until your desired crisp­ness is reached.)
  6. Driz­zle with tzatzi­ki and sprin­kle with minced parsley.
  7. Slice and serve.

Baking or Air Frying Your Pita Pizza

This mini piz­za recipe is made in just a few sim­ple steps. When it gets to the cook­ing part, you could def­i­nite­ly bake the pita piz­za in your oven, but for me, this is an air fry­er recipe.

What hap­pens to the pita flat­bread crust in my air fry­er is absolute­ly amaz­ing! It’s soft and ten­der in the mid­dle, but the edges get toast­ed and crisp and wonderful.

I used my Bre­ville Joule Oven [affil­i­ate link], which has a fan­tas­tic air fry­er option. Yes­ter­day, I was crank­ing these pita bread piz­zas out, two at a time. I got lucky enough to get to vis­it with a few of our kids and grand­kids. Every­body need­ed after school snacks or some evening munchies. My new air fry­er oven [affil­i­ate link] made it a quick and sim­ple process to offer these scrump­tious gyro pizzas.

Temperature and Timing in a Standard Oven

When I test­ed this gyro pita piz­za recipe, in the oven, I placed the pre­pared piz­za direct­ly on the pre­heat­ed oven rack. You can use a bak­ing sheet if you pre­fer but the fin­ished piz­za may not have as crisp a crust as you’re expecting.

Pre­heat your stan­dard oven to 425° and bake for 5 — 7 min­utes, until the desired lev­el of crisp­ness and brown­ing is achieved. 

Temperature and Timing in an Air Fryer

My Bre­ville Joule Oven was also set to 425° after I select­ed the air fry fea­ture. I like mak­ing gyro piz­za in the air fry­er because I can get that crispy crust result with­out heat­ing up the big oven. Which means I don’t heat up the whole house. Plus, it pre­heats much more quick­ly than my stan­dard oven. I can still make these mini piz­zas two at a time in my Bre­ville Joule.

Pre­heat the air fry­er to 425° and air fry the gyro piz­za for 4 minutes.

  • 23 Table­spoons roast­ed red pep­per hummus
  • 34 gyro meat slices, bro­ken or crum­bled (from my gyro meat recipe)
  • 45 cher­ry toma­toes (grape toma­toes, any tiny sal­ad tomato)
  • 2 Table­spoons feta cheese crumbles
  • 1/2 Table­spoon red onion, sliv­ered
