Description

Million Dollar Chicken Casserole is an easy, kid-friendly comfort-food dinner with tons of delicious serving options. It’s perfect for busy weeknights and leftovers are fantastic for the next day’s lunches.


Ingredients

  • 45 cups precooked boneless skinless chicken breast, shredded or chopped (I use Perfect Slow Cooker Chicken Breasts but any pre-cooked chicken or rotisserie chicken will work.)
  • 1 can (10.5 oz.) cream of chicken soup
  • 1 cup cottage cheese, small curd
  • 1/2 cup sour cream (or Greek yogurt)
  • 4 oz. (1/2 cup) cream cheese, softened
  • 1 teaspoon All-Purpose Seasoning
  • 1 sleeve of round butter crackers, crushed (Use Ritz or favorite generic brand.)
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F.
  2. Lightly spray or grease an 8×8 or 9×9 square pan.
  3. Mix the shredded chicken, cream of chicken soup, cottage cheese, sour cream, cream cheese and All-Purpose Seasoning in a large mixing bowl.
  4. Spread the mixture evenly into your prepared pan.
  5. Combine melted butter and cracker crumbs and sprinkle them over the chicken mixture.
  6. Cover with a lid or foil and bake.
  7. Bake covered for 30 minutes, until the casserole is hot and bubbly.  Remove foil and bake an additional 5 minutes uncovered to crisp up and brown the cracker crumble.
