Description
Ground Beef Tacos (Soft Tacos) are a quick, easy & affordable way to entice everyone to the table. Irresistibly savory, satisfying and zingy. They’re gonna want seconds.
Ingredients
- 6 flour tortillas, burrito size
- 2 cups ground beef taco meat (or browned ground beef), recipe in NOTES
- 1 1/2 cups shredded lettuce
- 3/4 cup pico de gallo, recipe in NOTES
- 1/2 cup Cheddar Cheese, grated
- 1/2 cup sour cream
Instructions
- Make Ground Beef Taco Meat (recipe in the notes section of the recipe card) or brown ground beef.
- Make Pico de Gallo ( recipe in Notes section of recipe card.) while taco meat cooks.
- Grate the cheese.
- Stack all 6 tortillas and warm them in the microwave for about 15 seconds. You want them to be pliable and easy to roll. Be careful not to overcook them.
- Lay out all six tortillas and add 1/4 cup of shredded lettuce in the center of each.
- Sprinkle 1/3 cup of warm ground beef taco meat (or browned ground beef) on top of the lettuce.
- Dollop 1 1/2 Tablespoons of sour cream over the meat on each taco.
- Add a heaping Tablespoon of freshly grated Cheddar cheese next.
- Finish filling the tacos by adding 2 Tablespoons of pico de Gallo to the top.
- Fold in the sides and then roll the tacos closed.
Notes
Ground Beef Taco Meat
- 2 pounds ground beef (85/15 ratio), browned and drained
- 1/3 cup homemade taco seasoning [or two store-bought packets]
- 1 cup water
- 2 Tablespoons Tomato paste
Brown and drain the ground beef. Add the taco seasoning, tomato paste and water to the beef and heat over medium heat for several minutes until the meat becomes saucy and most of the water has evaporated.
Easy Pico de Gallo
- 1 lb. cherry or grape tomatoes, small diced (You can dice full-size tomatoes if you prefer.)
- 1 cup red onion, minced
- 1/3 cup chopped cilantro
- 1 lime, zest and juice
- salt and pepper, to taste
Dice the tomatoes and onion. Chop the cilantro. Add tomatoes, onion, cilantro, lime zest and juice to a glass or other non-reactive bowl and stir them together. Season with salt and pepper to taste.
