Description
Chicken Pastina Soup is chicken & stars all grown up. It’s a quick, easy & comforting hug in a bowl. Everything chicken soup should be. Use up leftover chicken (or grab a rotisserie chicken) and have dinner on the table in 20 minutes! Yum!
Ingredients
- 6 cups chicken broth
- 3/4 cup grated carrot, (1 or 2 carrots)
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 3 or 4 sprigs fresh thyme leaves (1/4 tsp. dried thyme)
- 1 (7 oz or 8 oz) pkg. tiny pasta (pastina) – star shape is called estrella or stelline (or use any small pasta like ditalini, acini de pepe, or orzo)
- 2 cups boneless skinless chicken breasts, pre-cooked and chopped or shredded (leftover or rotisserie chicken)
- juice of 1/2 lemon (1 to 1.5 Tablespoons)
Instructions
- Add the chicken stock, onion and garlic powder, fresh thyme leaves, and grated carrot to a medium saucepan and bring them to a boil.
- Add the pastina to the chicken pastina soup as soon as the broth is boiling.
- Cook for 7 minutes, and then add the chicken.
- Continue cooking for 2 to 4 minutes until pasta is tender and chicken is heated through.
- Add the juice of one lemon. Stir to combine.
- Serve garnished with fresh parsley and thin lemon slices, if desired.
