This Easy Tomato Salad is a simple 10-minute side dish that’s bursting with juicy, sweet tomatoes and bright, fresh tangy flavor. It’s fresh and bright and the perfect thing to toss together for a potluck or backyard bbq. It’s a light refreshing side with an acidic pop that helps balance heavier dishes at the table. You’re gonna love it!
Ingredients
- 2 lbs. grape or cherry tomatoes, halved
- 1/2 cup (9 grams) parsley leaves, roughly chopped
- 2 – 3 Tablespoons (35 grams) red onion, cut into slivers
- 2 Tablespoons red wine vinegar
- 1/2 teaspoon salt
Instructions
- Cut the tomatoes. I cut cherry and grape tomatoes in half. If I have fresh garden tomatoes in the summer, I just cut them into bite-sized pieces.
- Rough-chop about one-half cup of fresh parsley leaves. Experiment with different herbs if you would prefer. I happen to love the fresh, clean taste of parsley, so that’s what I’ve used. But you do you. It’s gonna be spectacular!
- Cut red onion into slivers. I literally cut one slice out of the onion, about 1/8″ to 1/4″ thick, and lay it flat on the cutting board. I cut it into wedges as if I were slicing a pie. Perfect slivers!
- Toss the tomatoes, onion and parsley into a salad bowl.
- Pour in the red wine vinegar and sprinkle the salt over everything.
- Stir to coat and combine all the ingredients.
