Description

Creamy Chicken and Rice Casserole is an economical, absolutely delicious comfort food that will bring your family running to the table.  It’s a satisfying classic recipe loaded with wholesome chicken and veggies, all cooked in an herbaceous and flavorful creamy sauce.


Ingredients

  • 3/4 cup minced red onion
  • 1/4 cup butter, cut into 3 or 4 pats
  • 2 Tablespoons minced garlic
  • 1 1/2 lbs. raw chicken breast. cut into bite-sized pieces (about 3 cups cubed, or two to three whole breast pieces)
  • 3 cups brown rice
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of celery soup
  • 1 Tablespoon dried thyme leaves
  • optional: salt, pepper or chicken bouillon, to taste, AFTER baking
  • optional garnish: 2 Tablespoons finely grated Cheddar, fresh cracked black pepper, fresh thyme leaves

Instructions

  1. Preheat the oven 350° and grease 9×13 baking dish.
  2. Mince the onions and garlic and then toss them in the prepared baking dish with the butter. Place the pan of butter and veggies in the oven for the butter to melt while you get the other ingredients together.
  3. Cut the chicken breasts into bite-size pieces (no bigger than 1″ x 1″).
  4. Remove the pan from the oven onto a cooling rack.
  5. Stir the melted butter, onions and garlic together.
  6. Add the chopped chicken breast, rice, thyme, soups and chicken broth to the pan and stir to thoroughly combine all the ingredients.
  7. Tightly seal the dish with foil or a tight-fitting oven-proof lid made for the baking pan and bake your casserole for 1 hour and 10 minutes to 1 hour and 20 minutes, until the rice is tender and the internal temperature has reached 165°.
  8. Remove cooked casserole from oven and stir.  This is the time to taste for seasoning.  Add salt and pepper or even chicken bouillon if you prefer it for your own tastes.  When the seasoning is right you can stir in any add-ins/or garnish with a small amount of cheese and fresh herbs.
  9. Let the casserole rest for ten minutes before serving.
